Lemon Cake (the lost one)

~ grandma Vance's, more or less ~

ingredients
  • 1 cup butter, soft
  • 2 cups sugar
  • 3 eggs
  • 3 cups flour
  • 1 cup buttermilk
  • the zest of 2 lemons
  • a long pour of vanilla

The way I do it

  1. Cream the butter and sugar until it forgets it was ever separate.
  2. Add the eggs one at a time, then the lemon zest.
  3. Flour and buttermilk, turn about, just until smooth.
  4. 350° until the top springs back — start checking at 40 minutes.
  5. Glaze it while it is still warm so it sinks in.
